Pineapple Coconut Cookies
1 cup margarine 1 tsp. salt 1 tsp. vanilla 1 1/2 cup sugar 2 eggs 1 1/4 cup crushed pineapple 3 1/2 cups flour
1 tsp. baking soda 1 cup coconut
Preheat oven to 350°F. Cream together margarine, salt, vanilla, and sugar.
Add in eggs and pineapple, mix well. Add remaining ingredients and mix well. Drop by spoonfuls on greased cookie sheet. Bake 10 minutes. Cool and frost.
Frosting
3 cups powdered sugar 1/2 - 8 oz. pkg cream cheese 2 Tbs. margarine milk
Cream margarine and cream cheese; add powdered sugar, and add milk until reaches desired consistency.
