Marbled Spice Cake
1/4 cup butter, softened 1 cup sugar 2 eggs 2 1/4 cups cake flour 2 1/2 tsp. baking powder 1/2 tsp. salt
1/4 cup milk 2 Tbs. light molasses 2 tsp. ground cinnamon 1/2 tsp. ground cloves 1/2 tsp. ground nutmeg 1/2 tsp. ground mace
Preheat oven to 350 °F. Grease and flour 9" loaf pan.
In a large bowl, beat butter and sugar until fluffy, then beat in eggs. Beat in one cup of flour, baking powder, and salt;
beat in remaining flour, alternately with milk, and mix until smooth. Spoon 1/3rd of batter into small bowl; stir in molasses and spices until mixed well.
Into loaf pan, spoon a half-inch layer of plain batter. Spoon spiced batter and plain batter alternately into pan.
With table knife, cut through batter to create a marble effect.
Bake 60-65 minutes. Cool 10 minutes, then remove from pan and cool completely.
