Fruit Crumb Bars
2 1/2 cups flour 2 1/2 cups quick oats 1 1/2 cups brown sugar 1/4 tsp baking soda 1 1/2 cup butter, melted
1 can fruit filling (21-24oz can) 1 tsp lemon peel 1 cup powdered sugar 1/4 tsp vanilla 2 Tbs milk
Preheat oven to 350 °F.
Mix together flour, oats, brown sugar, and baking soda. Stir in melted butter until well mixed. Set 2 cups of mixture aside for
topping. Pat the remaining mixture into 15x10x1-inch pan. Bake 12 minutes. Stir peel into fruit filling. Spread on top of baked crust. Sprinkle with remaining oat mixture, slightly patting into filling. Bake 20-25
minutes until top is golden.
Mix together powdered sugar, vanilla, and milk for icing; drizzle over top, cool and cut into bars.
