Classic Cheesecake
Crust: 1 1/4 cups graham cracker crumbs
1/4 cup sugar 1/4 cup melted butter
Filling: 2 8-oz. packages cream cheese 1 cup sugar 4 eggs 1 tsp vanilla
Topping: 1 pint sour cream 1/2 cup sugar
1 tsp vanilla
Preheat oven to 350 °F.
Crust: Mix graham cracker crumbs, sugar and butter together. Pat mixture into 10-inch springform pan. Bake 6-8 minutes. Cool.
Filling: In mixture soften cream cheese, add sugar gradually. Add eggs one at a time, then add vanilla. Pour onto crust and bake 40 minutes, until cake is set. After cake has been removed from oven, raise temperature to 500 °F.
Topping: Whip sour cream lightly, add sugar and vanilla. Pour on top of cake. Bake 5 minutes. Cool and place in refrigerator overnight.
