Zucchini Bread
4 cups flour 2 cups sugar 2 tsp cinnamon 1 1/3 tsp salt 1 1/3 tsp baking powder 1 tsp baking soda
3 cups shredded, unpeeled zucchini 1 cup chopped nuts 1 cup raisins 4 eggs 1 1/3 cups oil
Preheat oven to 350 °F.
Mix together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts, and raisins. In another bowl, beat 4 eggs
and oil; pour over flour mixture, and stir until moist. Pour into 3 greased loaf pans. Bake for 1 hour. Cool in pan 10 minutes, then remove from pan and cool well.
